With our tour , you will receive a rare peek behind the scenes of the Kosher kitchens in Rome. We will discover how a kosher kitchen works, how the Jewish community handle the Kashrut and Halacha. What is the origin of the Jewish artichoke, and the secrets of the renowned burned-cookies bakery. We will discover how the the Roman Jews celebrate festivities and special occasions, what is the ancient oven in the Ghetto and its secrets of the Italian sourdough, and the great grandfather of the ciabatta bread. How does the Italian mom organizes the meals for her children and how are Pizza Rossa and Pizza Bianca related to the topic. What is the tradition of the Italian street food, the Roman sandwich, does pasta Alfredo really exists and the seasonal fruits and vegetables in the local market.
* All of our gastronomic activities involve a Rome’s Jewish ghetto tour, in which we will introduce you the ghetto quarter and it’s secrets from a local point of view, or better from our family’s perspective.
We will introduce you the Roman classic routs and how the Jewish story had begun. What is the Jewish ghetto and how did people live in it, the regional fish market, the foundation of the great synagogue, how did our family survive the Holocaust and how did it manage to live after the war ended. We will get to know all about the Libyan-Roman derby, special traditions and holidays, particular customs and the Roman Jewish dialect (the parallel to Yiddish ). We will talk about the the Sidur at the great synagogue, how the rabbi is dressed and how our wedding took place. We will talk about how do the Jewish people live today, where do they go to school, antisemitism and much more.

Our tastings and workshop are all with Teuda. Tastings are Kosher Halav Stam, Kosher Halav Israel Certificat, and Kosher Parve certificate. The workshop is Kosher Besari under the local Rabbanut supervision. The mix between milk and meat is done according to the known restrictions (always לחומרה).
